Bajala was founded by Lizbeth Sanchez and her partner Juan Flores, both of whom grew up surrounded by the vibrant food culture of Baja California, Mexico.

Lizbeth always knew her passion was in the kitchen, after moving to Portland, she worked with renowned chefs like late Chef Lauro Romero and Chef Pedro Almeida. Juan, who previously ran a salt company in Mexico, often discussed Baja California’s rich culinary scene with chefs, particularly the seafood that defined their home region.

Their shared love for Baja’s culinary traditions and their professional backgrounds—Lizbeth’s culinary expertise and Juan’s skills in business and marketing —came together to create the concept "Bajala", they opened in the Nob Hill Food Carts pod on June 1, 2024, with the goal of introducing Portland to the authentic taste of Baja-style fish and shrimp tacos.

Their menu features dishes like battered sturgeon tacos and wild-caught shrimp from Sinaloa, all served with house-made salsas and fresh tortillas.
